Easter Ham or Glazed Ham is a definite crowd pleaser. Especially on a buffet table with vegetable and potato casserole dishes.
INGREDIENTS:
10 pound bone in whole ham with fat cap
1 teaspoon ground pepper
½ teaspoon cayenne pepper
1 teaspoon ground coriander
½ teaspoon allspice
½ teaspoon ground cloves
1 teaspoon cinnamon
1 tablespoons paprika
½ cup brown sugar
1 teaspoon cumin
½ teaspoon salt
¼ cup good Dijon mustard
5 cloves garlic crushed
½ teaspoon freshly grated ginger
1 cup mango chutney
grated zest of one orange and all its juice
DIRECTIONS:
Preheat oven to 325 degrees F
Combine all of the ingredients, except the ham, in the bowl of a food processor and blend until smooth.
Cut diagonal slits across the fat cap of the ham cross wise to make a checkerboard pattern. Don’t cut into meat, just the fat.
Place the ham on a rack in baking dish fat cap up top and roast for 1 ½ to 2 hours. After the first hour, brush the glaze all over ham. Back in oven for another ½ hour, brush again with glaze. After two hours brush with glaze and test temperature of ham. It should be 140 degrees when done. Enjoy!
