1 cup all-purpose flour
¾ cup sugar
2 tablespoons + ¼ cup cocoa powder, divided
2 teaspoons baking powder
¼ teaspoons salt
½ cup milk
2 tablespoons vegetable oil
1 teaspoon vanilla
1 cup firmly packed brown sugar
1¾ cup hot water
Preheat oven to 350 degrees F.
In a medium bowl, combine flour, sugar, 2 tablespoons of the cocoa, baking powder, salt, milk, oil and vanilla. Batter will be very thick, don’t worry! You might need to stir with a metal spoon.
Spread batter into a greased 9″ pie plate or square pan. Combine brown sugar and ¼ cup cocoa. Spread over batter.
Top with boiling water. Bake for about 30-35 minutes until top is dry and puffed. Put a sheet pan underneath your pan in the oven, just in case. Don’t think it’s not done because underneath the cake is the sauce!
Serve warm with a scoop of ice cream or fresh whipped cream!
