Ingredients:
1/2 cup all purpose flour
1/2 cup yellow cornmeal
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 teaspoon freshly ground pepper
1 large egg
1/2 cup buttermilk
1 cup minced onion
2 cups vegetable oil
Directions:
Combine first 5 ingredients in a bowl. Make a well in the center of the mixture. In another bowl stir together egg and buttermilk.
Add wet to dry ingredients. Stir until moistened. Stir in onion.
Pour oil into 10-inch cast iron skillet, and heat to 375°F. Drop batter by tablespoonfuls into oil, and fry in batches 3 minutes on each side or until golden. If you have a tablespoon size ice cream scoop use that. I use one to keep all the hushpuppies the same size. Drain on papers towels….serve hot and enjoy!
